Gluten intolerance or sensitivity to gluten means that our body is unable to digest the protein gluten, which is found in grains. Our immune system recognizes these undigested proteins as foreign invaders and creates antibodies that have the task to destroy the " intruders ", or foreign bodies .

 

 

Gluten can damage the human body in two ways:

 

By causing an allergic reaction or intolerance that is the most serious form called celiac disease .

For allergic reactions responsible cereal are proteins : albumin , globulin , gliadin and glutenin ( gluten ) .

 

After consuming - especially wheat , comes to the sensitization of the organism and the production of IgE antibodies grade . Each following intake of grains (either through the digestive composition , either by inhalation ) , and even products that contain them in the trail , resluts by sensitized cells of the immune composition relishing inflammatory mediators ( histamine , etc.) and cause an allergic reaction.

 

Allergic reactions are commonly manifested by:

 

  • itching

  • red skin

  • swelling of the lips

  • nausea

  • vomiting

  • cramps

  • high nasal secretion

  • iritation of nasal mucosa ( rhinitis )

  • asthma ( " baking " asthma) . In rare cases , associated with exercicse and taking aspirin , can lead to anaphylaxis , which can lead to death .

 

The only therapeutic procedure is - avoiding wheat and grain ( and product that contain gluten ) that is observed to cause allergic reactions .

Unlike allergies , which is related to the release of histamine , celiac disease is a hereditary disease of the immune composition in which gluten is being recognized as an adverse factor and its entering into the body stimulates a series of reactions that cause inflammation in the small intestine .

 

The result of these developments is an inflammatory destruction of the intestinal mucosa cells and atrophy of the villi that are necessary for the absorption and utilization of nutrients . The consequence is malabsorption and malnutrition ( underweight ) , regardless of the total amount of food consumed . Furthermore , long-term damage to the mucosa of the small intestine can lead to very serious and life-threatening diseases .

 

Celiac disease is a very dangerous disease , unfortunately , in most cases it is undiagnosed because the symptoms such as bloating and stomach pain , chronic diarrhea , loss of body mass , gas , fatigue ... are easily attributed to stress, irregular diet and sedentary lifestyle .

 

Another problem is that celiac disease is usually recognized only when it has already made ​​a great disservice to the small intestine . It should be borne in mind that the only safe therapy for severe celiac disease ( ! ) Gluten-free diet .

 

Gluten intolerance and createing antibodies to gluten do not result in any case with destruction of the villi and diagnose of celiac disease .

 

New research reveals that in certain doses gluten everybody can cause gastrointestinal symptoms such as :

 

  • pain

  • bloating

  • constipation

  • diarrhea

  • fatigue to any person

 

In this case, the word of hypersensitivity to gluten , is a relatively new concept that has led to the popularization of a gluten-free diet, and among those who do not suffer from celiac disease .

 

It should be noted that a gluten free diet IS NOT harmful to your body , and agluten as aprotein is not essential amino acid, and can be replaced by many other dietary sources .
