Pudding black rice and coconut milk (gluten-free)

 

• composition:

1 cup black rice, 1 cup sugar, 1 can coconut milk

• how to prepare:

Put rice, 3 cups of water and half a teaspoon of salt to a boil in a pot, then reduce the temperature, cover and leave for 45 minutes.

 

Add this sugar, half a teaspoon of salt and 1 cup of coconut milk and leave the strongest temperature until it boils, then reduce the range while the low fire, keep uncovered, intervene occasionally until the mixture is thick and the rice soft (about 30 minutes).

 

Then remove it from the stove until it cools to room temperature, constantly whisking occasionally, for at least 30 minutes. Before serving stir pudding and divide it into 8 bowl, then add across each remaining coconut milk.
